Ingredients:
- 8 ounces (about 225 grams) of spaghetti or fettuccine
- 2 boneless, skinless chicken breasts
- 4-6 slices of bacon, chopped
- 2 cloves of garlic, minced
- 2 large eggs
- 1 cup of grated Parmesan cheese
- 1/2 cup of heavy cream
- Salt and black pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions:
1. Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set it aside, reserving about 1/2 cup of pasta cooking water.
2. Prepare the Chicken:
- Season the chicken breasts with salt and black pepper. In a large skillet, heat some olive oil over medium-high heat.
- Add the chicken breasts and cook for about 6-8 minutes per side, or until they are cooked through and no longer pink in the center.
- Remove the chicken from the skillet and let it rest for a few minutes. Then, slice it into thin strips or bite-sized pieces.

- In a bowl, whisk together the eggs, grated Parmesan cheese, heavy cream, and minced garlic.
4. Combine Everything:
- Return the cooked and drained pasta to the skillet you used for the chicken

- Pour the egg and cheese mixture over the pasta, chicken, and bacon while they're still hot. Toss everything together quickly to coat the pasta and ingredients with the creamy sauce. If the sauce is too thick, add a little of the reserved pasta cooking water to loosen it up.
5. Season and Garnish:
- Season the dish with salt and black pepper to taste.
- Garnish with chopped fresh parsley if desired.

- Serve the chicken carbonara immediately while it's still warm. Sprinkle with extra Parmesan cheese if you like.
